Beef Chili

Ingredients:

  • 1 lb. ground beef
  • 1 large onion, diced
  • 2 garlic cloves, minced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 jalapeno pepper, seeded and minced
  • 2 tbsp chili powder
  • 2 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp paprika
  • Salt and pepper, to taste
  • 1 can (28 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup water
  • Shredded cheddar cheese, for serving (optional)
  • Chopped fresh cilantro, for serving (optional)

Instructions:

  1. In a large pot or Dutch oven, brown the ground beef over medium-high heat until fully cooked. Drain any excess fat.
  2. Add the onion, garlic, green and red bell peppers, and jalapeno pepper to the pot and cook until the vegetables are soft and fragrant, about 5 minutes.
  3. Stir in the chili powder, cumin, oregano, paprika, salt, and pepper. Cook for 1-2 minutes or until fragrant.
  4. Add the diced tomatoes, kidney beans, black beans, and water to the pot. Stir to combine.
  5. Bring the chili to a boil, reduce heat to low, and simmer for 20-30 minutes or until the flavors have melded together and the chili has thickened to your liking.
  6. Serve the chili hot, topped with shredded cheddar cheese and chopped cilantro, if desired.
